Preheat your oven according to packet instructions. While oven heats, mix your salt and chilli seasoning ingredients in a small bowl and set aside. Put your chips in the oven once preheated.
Whilst chips cook, chop the chillies, onion, and pepper. Wait until a few minutes before your chips are cooked before moving on to the next step.
When chips are almost finished cooking, heat up your sesame oil in a pan and fry the chilli, pepper and onion on a high heat until they begin to caramelise.
Add the salt and chilli seasoning mix to the pan and coat the vegetables for a further minute, Once coated, add the soy sauce and mirin.
Add cooked chips to the pan and stir to coat in the chips and spice mix. Once thoroughly coated, serve and enjoy.
